Out of 10,000 entries into this year’s Great Taste awards, Holycross Original Butterscotch Sauce produced by The Tipperary Kitchen has risen to the top to be named one of Britain’s Top 50 Foods. This result means that Holycross Original Butterscotch Sauce joins the ranks of some of the most outstanding foods available and is worth searching for and savouring.

The story of our Top 50 product starts with fantastic Irish ingredients from Tipperary. That rich fresh cream from Thurles Co-Op and butter produced in Tipperary town ensured our product stood out in the crowd.

We’re over whelmed to be included in the Top 50 Foods of 2016. Our small, gifted team have truly put a sparkle to our village bakery. It is an achievement and to be named on the Top 50 Foods is a massive result for any producer – it means our product has been BLIND-tasted, tasted and tasted again – by some of the most demanding and knowledgeable judges in the country who will only choose the most exquisite food to be in the Top 50.



Judged by over 500 of the most demanding palates, belonging to food critics, chefs, cooks, restaurateurs and producers as well as a whole host of food writers and journalists, Great Taste is widely acknowledged as the most respected food accreditation scheme for artisan and speciality food producers. As well as a badge of honour, the unmistakeable black and gold Great Taste accolade is a signpost to a wonderful tasting product, which has been discovered through hours and hours of blind-tasting by hundreds of judges. 

Recognised as a stamp of excellence among consumers and retailers alike, Great Taste values taste above all else, with no regard for branding or packaging. Whether it is jam, gin, beef or butter being judged, all products are removed from their wrapper, jar or bottle before being tasted. The judges then savour, confer and re-taste to decide which products are worthy of a 1-, 2- or 3-star award.

There were 10,000 Great Taste entries this year and of those products, 141 have been awarded a 3-star, 878 received a 2-star and 2,520 were awarded a 1-star accolade. The panel of judges included; TV chef and author, Valentine Warner, MasterChef judge and restaurant critic, Charles Campion, fifth generation baker, Tom Herbert from Hobbs House Bakery, and Great British Bake Off winner, Frances Quinn; food buyers from Harrods, Selfridges, Fortnum & Mason, Harvey Nichols and Waitrose and chefs including, James Golding, chef director of THE PIG Hotels, and Kevin Gratton, chef director of HIX Restaurants. These esteemed palates have together tasted and re-judged the 3-star winners to finally agree on the 2016 Top 50 Foods, the Golden Fork Trophy winners and the 2016 Supreme Champion.

This year’s Great Taste Awards from London has once again proved successful for our bakery team with our handmade

 HOLYCROSS BUTTERCREAM CAKE scooped a gold star.

Judges comments  included  ” a lovely looking cake”

beautifully presented with good coffee flavour”

We are delighted as it takes us 3 days to make and assemble.

DAY 1: Coffee madeira sponge is weighed, whipped, poured, baked and cooled – all by hand. Enough for three layers of sponge.

DAY 2 – Part 1: A special blend of crème patisserie and coffee buttercream (each made by hand) are whipped together into a light fluffy frosting. We work hard to avoid that heaviness that is normally associated with buttercream cakes – light & full of flavour is where were at!

DAY 2 – Part 2: The assembly. Large sheets of coffee sponge are sandwiched together by fluffy coffee buttercream. The top of the cake is finished with the buttercream and a light sprinkle of chocolate curls.

DAY 3: The large trays of cakes have been allowed to chill overnight. The ‘bakers tray’ of layered coffee buttercream cake is now sufficiently set to cut down to size. Each cake is then carefully placed into its presentation box, labelled and packed into crates for delivery throughout Tipperary.
